Ingredients

¾ lb. chicken breast, skinless
1 cup orange juice
2 teaspoons garlic powder
1 tablespoon low sodium soy sauce
1 cup crushed whole grain flake cereal
2 tablespoons light brown sugar
1 egg

Steps

  1. Preheat oven to 400°
  2. Remove any excess fat and cut chicken breast into strips, about 2 inches wide.
  3. Combine orange juice, garlic, and soy sauce in a clear, resealable bag.
  4. Add chicken strips to resealable bag, seal, and marinate in refrigerator as time allows.
  5. Crush cereal and combine with brown sugar in a shallow dish.
  6. Beat egg in another shallow dish.
  7. Remove chicken strips from marinade.
  8. One at a time, lightly coat each chicken strip in egg and coat in corn cereal mix.
  9. Arrange chicken strips at least ½-inch apart on a baking sheet.
  10. Bake for 10-15 minutes until internal temperature of chicken is 165°
