
Ingredients
1/3 cup lime juice 1/4 cup olive oil or canola oil 1 teaspoon garlic powder 1/2 teaspoon salt 1/8 teaspoon cayenne pepper 1 (15 oz.) can low sodium black beans, drained and rinsed 1 cup corn kernels 1/2 medium avocado, peeled, pitted, and diced 1 green pepper, chopped 1 medium tomato, chopped 1/2 cup onion, chopped 1/4 cup cilantro, chopped
Steps
- Rinse all produce under cool running water before food preparation.
- Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small bowl and
whisk until well blended. - In a large bowl, combine beans, corn, avocado, green pepper, tomato, onions,
and cilantro. Pour olive oil and lime dressing over the chopped vegetables. Stir. - Serve immediately with chips or refrigerate until ready to serve.
