Ingredients

1 1/2 tablespoons canola oil
1 clove garlic, minced
1/2 cup white onions, chopped
1 1/4 pound chicken thighs, skinless
10 ounces fresh or frozen green beans
¼ teaspoon black pepper
½ teaspoon salt

Steps

  1. Rinse fresh produce before cooking. Heat oil in a non-stick pan. Add garlic and onions; stir until blended. Cook over medium heat, until tender, about 5 minutes. Remove from pan.
  2. Place chicken in the pan. Cook both sides over medium heat, until chicken is thoroughly cooked and internal temperature is 165° Remove chicken from pan; keep warm.
  3. Place green beans, salt, pepper and cooked garlic and onions in the same pan. Cover and cook over medium-low heat until beans are tender, about 5 minutes.
  4. Add chicken to vegetable mixture. Continue cooking, stirring occasionally, until heated through, about 3 minutes.
  5. Serve warm.
